Happy MONDAY!!!!
This weekend, Keith’s uncle and cousin were in town. I love having visitors! It gives us an excuse to go out into the city and play tour guide. We did some “touristy” things that we normally never do… and they were so much fun!
We went to Chelsea Market:
Chelsea Market is an awesome place that has tons of different foods, vendors, and shops. We didn’t eat there, but just walking through the building is exciting! There are lots of people, and tons of things going on.
Museum of Natural History! (my favorite museum in NYC)
And the Beautiful High Line Park:
The high line is an old freight train rail that they converted into a gorgeous public space. It runs for something like 50 blocks (all elevated) and they have lots of art, food, music and events. Also, one of my favorite parks!
Ok now onto the ICE CREAM!!!
I love having cold healthy ice creams. They are great at any time of the year, during any part of the day. I really could eat ice cream all day every day!!! Here are some ice creams that I have been enjoying lately..
- Frozen Mango ( I don’t measure but I’m guessing about 1 cup)
- 1 Frozen banana
- 1 tsp Chia
- 1 tbs goji Berries
- 4 tbs pomegranate seeds
- 1 tbs shredded coconut
- Sweetener of choice (I used 2 stevia packets)
- 1/2 tsp vanilla extract
- Optional: 1/2 tsp coconut extract
Blend Mango, banana, chia, 1/2 tbs goji, 2 tbs pomegranate seeds until creamy (if you need add some water or your choice of milk to get things going). Transfer to bowl, and top with remaining goji, pomegranate, and coconut. ENJOY!
- 1 Unsweetened Acai Smoothie packet (you can get these at Whole Foods or any natural food store)
- frozen cherries (I don’t measure, but I think 1/2 cup)
- 1 tbs coco powder
- 1/2 tsp chia seeds
- 1 scoop protein powder (I used Chocolate)
- 1/2 tbs cacao nibs
- 1/2 tsp vanilla extract
- 2 stevia packets
- 3 tbs cold coffee (or liquid)
Combine all ingredients except cacao in a blender. Top with cacao, and ENJOY!
Secret Mint Chocolate Chip Ice Cream
- 1- 1 1/2 frozen banana
- 1/2 cup frozen kale or spinach (secret ingredient!!!)
- 1/2 tsp vanilla extract
- 1/2 tsp chia seeds
- 2 stevia packets
- 1 tsp peppermint extract (I like it minty… you can always add more…)
- 1 Dove Dark Chocolate square
- 1/2 tbs cacao nibs
Combine all ingredients except chocolate and cacao in a blender. Blend until smooth (make sure greens are completely broken down!) Transfer to bowl. Using kitchen shears, cut chocolate square into shreds. Top ice cream with cacao nibs and shredded chocolate. ENJOY!!!!
I love this ice cream because it is a great way to get some added greens!
