Acai Protein Bowl

Happy Sunday!

One of my favorite things to do on a Sunday morning is to sleep in, make a delicious breakfast, and RELAX. The weeks can get so hectic, and I think it is important to take at least one day a week to simply veg out! I don’t get to do this every weekend, but whenever I have a free Sunday I take advantage of the morning!

I have been seeing TONS of Acai bowls online. Not only do they contain healthy ingredients, but they are absolutely gorgeous! I couldn’t believe that I’ve never made one of these bad boys, so I figured today was as good as any to see what all the hype was about!

I was delighted with this breakfast. I added lots of yummy toppings and it was fun to discover each and every bite tasted a bit different depending on what topping was on my spoon! I am huge on texture, and this bowl met all of my requirements. The acai part was velvety and smooth, and the toppings added a satisfying crunch. I added some raisins and the chewiness was perfect. I think this may be a new favorite!

It is crucial to get protein and healthy fats during breakfast. These help to fuel your day and keep you full for a long time. I decided to include some protein powder to the base, and added toppings like nuts, hemp hearts, and chia seeds for a nice dose of healthy fats. Right now, I feel totally satisfied and not overly full! I was also surprised to discover that Acai has ZERO grams of sugar! ACAI BOWL FOR THE WIN!

This Acai bowl recipe is packed with healthy protein and fats! It is the perfect way to start you day. Vegan, paleo, and delicious.

Serves: 1 serving
Ingredients
  • BASE
  • 2 Sambazon Acai Berry Unsweetened Superfruit packs
  • ¾ (frozen or fresh) banana
  • 1 TBS protein powder
  • ¼ cup boxed coconut milk (or almond etc)
  • stevia (1 packet)
  • ½ tsp vanilla
  • TOPPINGS
  • (I used)
  • ¼ cup frozen blueberries
  • ¼ banana
  • 1 TBS rolled oats
  • 1 TBS raisins
  • ½ TBS hemp seed hearts
  • 1 tsp chia seeds
Instructions
  1. Combine all base ingredients in a blender
  2. Blend on high until a smoothie like consistency is created
  3. transfer to bowl
  4. add toppings
  5. ENJOY!

    I LOVE smoothies and smoothie bowls. Acai makes for the perfect smoothie bowl too - it’s one of my personal faves. I’ll definitely be giving your rendition awhirl… I mean it’s just another excuse to have one more smoothie right 😉
