I just made these last week for Shrove Tuesday and these were both easy and delicious! I love interesting pairings of flavor and this recipe appealed to me for that reason. I pretty much followed the recipe with the exception of the chia egg and the vegan cheese. I am vegetarian but not vegan so I used actual egg and manchego for the cheese. I ground my own quinoa flour by grinding quinoa in my coffee grinder…good way to use up extra quinoa. The crepes set and cooked very well. My boyfriend selected this of a couple choices I gave him and we both thought these were excellent and would definitely make them again! We would rate this a 5/5!
