Cauliflower Rice Pudding
Synthia here.
So sorry you’re having trouble with it. I just made it agai. And it was succesful.

Some things that may effect it (I’ll add them to the recipe)
1- don’t rice the cauliflower to finely. My cauliflower was ore riced from Trader Joe’s and was a bit on the thicker side

2- if it doesn’t get to the correct consistency, you may need to add more cauliflower, depending on your riced thickness

3- I used boxed egg whites. I didn’t think that it would make a difference with fresh egg whites, but perhaps it does

4- you can add sweetener or cinnamon depending on your taste preference. I don’t like things sweet, but you may need more.

I hope this helps and I’m sorry for any inconvenience!!
