Decisions Decisions!

“What do I want for dinner tonight?”

This question plagues us every night. You ask yourself: Do I want Sushi? Perhaps some pizza would do the trick. Or maybe I should just screw a traditional dinner and eat ICE CREAM!!! (I have done this before…sorry mom).

Last night, as I was pondering my choices, I came to a dilemma. I wanted an omelette. No, I wanted veggie stir fry. No I DEFINITELY wanted an omelette….but stir fry sounded SO good.

CRAP.

Well, I decided not to make a decision. I would have both. Yup, I was going to make sure that I could have my omelette, and also enjoy the vegetable sensation that is the Asian Stir Fry.

image-92Perhaps this isn’t the most gorgeous picture, but I promise this tasted like heaven.

Stir Fry Omelette

  • 4 egg whites
  • chopped asian Inspired veggies of choice (I used shiitaki mushrooms, bean sprouts, carrots, pepper, kale, onion, broccoli sprouts and green pepper)
  • 1/4 cup cheese of your choice
  • 1/4 cup quinoa
  • 1 tbs soy sauce
  • Sriracha (if you like spicy)
  • 3 tbs water

Spray a pan with cooking spray. Cook the veggies by adding water and “Stir Frying” them. Once veggies are cooked, drain excess water and push them to one side of the pan. Next, pour egg whites over the veggies and the “empty space” in the pan. Add cheese to the veggie side. pour the soy sauce and sriracha over the eggs. Flip the egg to make an omelette! Serve over quinoa. ENJOY!!!
