Pumpkin time is here!!!

Reasons we all know that fall is just about here:

  • We find ourselves being “chilly” at night…a sweat shirt is a must while outside
  • Hot coffee is more popular than ice coffee
  • You begin yearning to wear your favorite boots (you know, those gorgeous leather ones)
  • Pumpkin flavored everything starts popping up everywhere!!

This last fact may be my favorite of all. I love pumpkin. Pumpkin coffee, pumpkin cookies, pumpkin pie smoothies, pumpkin pie oatmeal the list goes on and on!!!!!

Well, today I decided that it was time that I re-introduce my beloved pumpkin back into my life. IT WAS A GREAT IDEA!

INTRODUCING THE:

 FROZEN PUMPKIN PIE BITE!!!

These seriously taste like little frozen melt in your mouth bites of pumpkin pie joy. You all know how much I Love my Frozen “Bites”…these may be my new favorite.

Frozen Pumpkin Pie Bites

Fills 6 squares in an ice tray

  • 1/3 cup canned white beans (Any will work: chic peas, navy etc)
  • 1/4 cup + 2 TBS pumpkin puree (NOT pumpkin pie puree)
  • 1 TBS Coconut Butter or Coconut oil (I used Artisana Brand)
  • 1 TBS coconut Flour (any flour should work)
  • 2 tsp brown sugar
  • 1/2 ripe banana
  • 2 tsp pumpkin pie spice
  • 1 tsp Cinnamon
  • 3 packets stevia
  • 1 tsp vanilla
  • 1/4 baking soda
  • dash of salt

Combine all ingredients in a blender or food processor. Blend until smooth. Transfer to an ice tray and put in the freezer overnight. ENJOY!!!

Each bite has 1 points plus weight watchers point

Cheesecake Bites Obsession

Ever become obsessed with a food? I have. I actually tend to eat the same things each and every day. For some reason, I am a creature of habit and continue to crave the same foods all the time.

A couple of weeks ago, I invented my favorite dessert ever. The Frozen Chocolate Cheesecake bite was introduced to the world! I quickly became addicted to the little chocolaty morsels, and decided I would create another flavor: Frozen Chocolate Chip Cookie Dough Bites were born

When you enjoy a food every single day, it quickly runs out. Today I faced that dilemma. The solution? Frozen Strawberry Cheesecake Bites…they did not disappoint.

Frozen Strawberry Cheesecake Bites

Fills six cubes

  • 1/3 cup white beans of choice
  • 1 TBS Coconut Oil or Coconut Butter
  • 4-5 strawberries
  • 1/2 banana
  • 1 tbs coconut flour (I’m pretty sure any flour will work. Protein powder is also a great choice)
  • 2 packets stevia (more or less for desired sweetness)
  • 1/16 tsp baking soda
  • PINCH of salt
  • 1 tsp vanilla
  • 1 TBS shredded coconut

Blend all ingredients (EXCEPT shredded coconut) until smooth. Stir in shredded coconut. Spoon mixture into an ice tray (fills 6 squares). Freeze for at least 3 hours. ENJOY!

I guess there could be worse things for me to be obsessed with… stay tuned for more flavors. These bad boys will continue to have a special place in my freezer.

Frozen Cookie Dough Bites

You guys…I have a problem. I am obsessed with my Frozen Chocolate Cheesecake Bites!!  I know they’re good because Keith likes them.

Me: “Babe, try this, I promise it’s amazing”

Keith: “Is that one of your healthy things?”

Me: “Just eat it”

Keith: “Wow, that’s really good!”

I KNOW it’s good Keith, I know.

Well, the other night I was in the mood to bake. When I expressed this urge the boy QUICKLY volunteered that cookies would be a fantastic choice. Since I love the guy so much, I made him cookies full of butter, white flour, refined sugar, and semi sweet chocolate chips.

…The things we do for the ones we love.

Anyway, this morning, I went into the freezer to enjoy one of my Frozen Chocolate Cheesecake bites. As I rummaged through the freezer discovered something terrible. THERE WAS ONLY ONE LEFT!!! I instantly took out my Vitamix, and prepared to make another batch. UGH, I had used the rest of my cocoa powder the day before. I could not win.

I was stuck in a corner. What could I do???

Then I remembered the Cookies from the night before and thought…”Frozen Cookie Dough Bites.”

YES… FROZEN CHOCOLATE CHIP COOKIE DOUGH BITES.

  image-74 image-75  Chocolate Chip Cookie Dough Bites

(Makes six servings, or double the recipe and fill an entire 12 square ice tray)

  • 1/3 cup white beans (I used navy beans, chic peas work too!)
  • 1 TBS nut butter of choice (I used Sunflower Seed Butter)
  • 1/2 ripe banana
  • 1-2 packets stevia
  • 1 dove dark chocolate square (or one tbs chocolate chips)
  • dash of salt
  • 1/4 tsp baking soda
  • 1 tsp vanilla
  • 1 TBS coconut flour (any flour will work, or protein powder too)

Blend all ingredients EXCEPT CHOCOLATE SQUARE together in a blender until smooth. Transfer mixture to a bowl. Using cooking scissors, cut chocolate square into flakes and mix into batter. Next spoon batter into an ice tray (into 6 separate squares, or 12 if you have doubled the recipe). Freeze for at least three hours, and then.. ENJOY!!!!

Frozen Chocolate Cheesecake Bites

First, I want to apologize if you follow me and got a million emails saying I updated a post. For some reason WordPress is being tricky tonight!

I thought about coming up with a clever title for this post, but then I decided that the feature recipe would speak for itself.

Sometimes, the only thing that will make me happy is something sweet. I’m not talkin’ “fruit” kinda sweet. I’m talkin fudgey, chocolatey, melt in your mouth, makes your heart soar with every bite kinda sweet. Sound over the top? Perhaps, but you KNOW you have had that feeling.

Yesterday, I experienced just this! I needed desert, and I needed it immediately!!! I cruised over to my favorite blog, Chocolate Covered Katie, and knew I would find exactly what I needed. I settled on Brownie Batter Dip! Being the control freak that I am, decided to make it with less fat, calories, and make it portion controlled. I then had the BRILLIANT idea to freeze my concoction and enjoy it later as an icy treat! What did I come up with? Something that tastes like Chocolate Fudge, and curiously resembles the texture of Cheesecake.

THEN IT HAPPENED

The Frozen Chocolate Cheesecake Bite was born. The outcome of my concoction was a cold fudge like morsel that reminded me a lot of cheesecake… and it was MARVELOUS!

Frozen Chocolate Cheesecake Bites

(Makes 6 servings….or 3….if you REALLY want!)

  • 1/3 cup Black Beans
  • 2 tbs cocoa powder
  • 1/2 banana
  • 1 tbs Nut butter of choice
  • 1 tbs coconut flour (any flour should work)
  • 1 dove dark chocolate square (Or 1 tbs chocolate chips)
  • 1/8 tsp salt
  • stevia (I used 2 packets)

Melt Chocolate square (or chips) in a cup until soft (about 15 seconds). Combine ALL ingredients (including square) and blend until smooth. Transfer mixture into an ice tray (Should fill 6 cubes). Freeze for a couple of hours until hardened, or over night. Enjoy!!!!

I chopped these up and used them as a topping for a strawberry shake!!!

Strawberry Shake

  • 1 and 1/2 -2 frozen banana
  • handful of frozen strawberries (I don’t measure fresh fruit and veggies… maybe 1 cup?)
  • 1/4 cup milk of choice
  • Stevia
  • 1 tps vanilla
  • 4 ice cubes
  • OPTIONAL: 1/2 cup greek yogurt

Blend all ingredients and ENJOY!

I will admit, the Cheesecake bites melted a bit when I mixed them into the shake. I enjoy them better by themselves.. but feel free to experiment!!!
