Smoothie Queen

I feel like I keep posting about  fast and easy foods. I’m sorry if I seem repetitive or uncreative, but convenience seems to be the headline for my life lately!!! If it takes me five minutes or less to make it, then I’m all in!!!

I have been living on smoothies. I mean who doesn’t love them. They are a great way to incorporate some extra greens, protein, fruits, and vitamins! They also don’t give you an overly full/ uncomfortable feeling. Yup, smoothies are awesome.

Normally, I just take whatever frozen berries I have laying in my fridge, throw in some greens, protein powder, spirulina, and chia seeds and call it a day. Today I was feeling more creative and inspired by the fall weather.

Isn’t this color green gorgeous?! Usually green smoothies come out a muddy green/brown color, but looks so appealing to me :) Wanna know what went into it?

Asian Pear and Pistachio Smoothie

  • 1 small asian pear
  • 1/2 frozen banana
  • 1 TBS pistachios
  • 1 cup coconut milk (or almond, rice, soy etc)
  • Spinach (as much as you want!)
  • 1/2 tsp chia seeds
  • 1 TBS protein powder
  • 1/2 cup plain 0% greek yogurt
  • 1 tsp vanilla
  • 3 packets stevia (I like mine sweet, but add or subtract as you wish)
  • 4 ice cubes

Blend all ingredients and enjoy!!!!

This was so incredibly satisfying. I also was obsessed with the texture. It was so smooth and balanced. Try it out.. I dare you :)

Well, life continues to be absorbed by Big Fish. I suppose it’s not a bad way to spend my time ;)

Frozen Cookie Dough Bites

You guys…I have a problem. I am obsessed with my Frozen Chocolate Cheesecake Bites!!  I know they’re good because Keith likes them.

Me: “Babe, try this, I promise it’s amazing”

Keith: “Is that one of your healthy things?”

Me: “Just eat it”

Keith: “Wow, that’s really good!”

I KNOW it’s good Keith, I know.

Well, the other night I was in the mood to bake. When I expressed this urge the boy QUICKLY volunteered that cookies would be a fantastic choice. Since I love the guy so much, I made him cookies full of butter, white flour, refined sugar, and semi sweet chocolate chips.

…The things we do for the ones we love.

Anyway, this morning, I went into the freezer to enjoy one of my Frozen Chocolate Cheesecake bites. As I rummaged through the freezer discovered something terrible. THERE WAS ONLY ONE LEFT!!! I instantly took out my Vitamix, and prepared to make another batch. UGH, I had used the rest of my cocoa powder the day before. I could not win.

I was stuck in a corner. What could I do???

Then I remembered the Cookies from the night before and thought…”Frozen Cookie Dough Bites.”

YES… FROZEN CHOCOLATE CHIP COOKIE DOUGH BITES.

  image-74 image-75  Chocolate Chip Cookie Dough Bites

(Makes six servings, or double the recipe and fill an entire 12 square ice tray)

  • 1/3 cup white beans (I used navy beans, chic peas work too!)
  • 1 TBS nut butter of choice (I used Sunflower Seed Butter)
  • 1/2 ripe banana
  • 1-2 packets stevia
  • 1 dove dark chocolate square (or one tbs chocolate chips)
  • dash of salt
  • 1/4 tsp baking soda
  • 1 tsp vanilla
  • 1 TBS coconut flour (any flour will work, or protein powder too)

Blend all ingredients EXCEPT CHOCOLATE SQUARE together in a blender until smooth. Transfer mixture to a bowl. Using cooking scissors, cut chocolate square into flakes and mix into batter. Next spoon batter into an ice tray (into 6 separate squares, or 12 if you have doubled the recipe). Freeze for at least three hours, and then.. ENJOY!!!!
