Lately, I have a lot of people asking me if I’m vegan. The answer is no. I don’t like to label myself as any sort of “eater”. I found when I did in the past, it didn’t lead to anything but restrictions and rules. I like to enjoy the types of food that make my body feel the best. I don’t eat certain thing because they don’t react well in my body, and do eat others because they make me feel good…simple as that. I eat dark chocolate every single day, I steer clear from dairy products, I enjoy certain grains, I don’t process eggs or meat well, and I LOVE a delicious piece of wild caught fish from time to time! I eat what I like, and I eat what is healthy and delicious! I think it’s really important to look at food as fuel. You wouldn’t put garbage into your BMW to make it run at peak performance, right?
Over the past few years, healthy eating and fitness has become super trendy! It is now “In style” to be health conscious, to work out, and to take great care of your body! We are living in a time of self-awareness and I think it’s absolutely amazing! (these things really excite me…can ya tell?)
OK! Now onto some food!
I have always loved broccoli and cheese soup! I mean, there really isn’t much better on a cold winter day than a delicious, hot bowl of creamy soup. I’ve been craving it lately. NYC has been giving nothing but freezing temperatures, ice and snow. Broccoli and Cheese soup is comfort food, and comfort is just what I have needed on these cold wintry days.
When I was cleaning out my fridge, I noticed that I had some left over Vegan Mac and Cheese Sauce. I decided that I would use it up, but in a different way. I saw that I had lots of broccoli. From that point forward the only thing I wanted to make was a delicious, decadent, creamy, broccoli and cheese soup.
So, I present to you, left over magic. The most amazing vegan broccoli and cheese soup ever.
- 1 cup mac and cheese sauce
- ⅓ cup milk
- 2 cup broccoli steamed
- ½ tsp salt
- Steam 2 cups Broccoli
- Once broccoli is steamed, transfer to a blender, add remaining ingredients and plenty on high
- enjoy!
I seriously think this is my best soup yet. My favorite part about it is it doesn’t taste “vegan’y” if you know what I mean. In my opinion, it tastes like restaurant style broccoli and cheese soup! Try it out and see for yourself!!
