Recently, Keith and I went out to Long island to visit my parents. They have a gorgeous garden with lots of fruits, veggies and herbs. I NEVER discriminate against ANY herb…I love them all. That being said, there is something about fresh mint that steals my heart EVERY time. Mint makes me think of summer. It’s naturally cooling, subtle in flavor, and adds the perfect amount of spark to any dish.
It is so incredibly hot here in NYC, and I can’t even wrap my brain around turning the oven on. When it gets this warm, my vitamix becomes my best friend! Since I had so much fresh mint (I stole it all from my parents….sorry mom!) I wanted to utilize it! I decided to make popsicles. I mean common…who doesn’t love popsicles in the summer?!
These popsicles are absolutely incredible. The subtle flavor of cucumber and hint of mint compliment each other beautifully. They are light, refreshing, icy, and delicious. They are also SUPER easy to make! Just pop the ingredients in a blender, pour into the mold, and freeze. ANYONE can make these…and EVERYONE should!!!
- ½ cup frozen pineapple
- ¼ cup fresh mint packed
- ½ cucumber (Seeds and skin removed)
- Juice of 1 lemon
- 1 packet stevia (or sweetener of choice)
- 1 tsp chia seeds
- ¼ cup water (you may need more depending on the power of your blender)
- optional- 1 tsp spirulina powder
- Combine all ingredients in a blender
- blend until you get a smoothie like liquid (you may need to add more water)
- pour liquid into popsicle molds
- freeze until solid (about 3 hours)
- enjoy!!!

Mmmm I am so in love with the combination of cucumber and mint! The additional of pineapple in the babies was pure genius… pinned!!
